I am aware that Epsom Salt helps to enhance green foliage. But what about red-leaf trees? I am groing a red-leaf apple bonsai from seed and cuttings. What can I expect to happen if I feed it with Epgom Salt??

If your tree have magnesium deficiency epsom salt vill work to cure the symptom no matter species of tree.

I googled Epsom salts and got a response about general yard and garden care. (Garden in the USA sense of vegetables,? etc.). It recommended gutting a soil test to see what deficiencies there are, which certainly makes sense.
How would you do avoid test on a bonsai?

Yes, a soil test would be adviceable before correct big mineral inbalances in soil. In bonsai grid, I am not sure it is needed. A corect diagnosis of the plant and careful adding extra to see the response would do.
All general fertilizers and all tap waters contains magnesium. In most cases in significant levels. Deficiency is most common in soil with a high lime content. So check for lime in the substrate used and replace it come next repotting would be my advice.
